Garlic Butter Cod with Roasted Brussels Sprouts

Description

Delicious cod fillets cooked in garlic butter and served with roasted Brussels sprouts.


Ingredients

Scale
  • 4 cod fillets (6 oz each)
  • 2 cups Brussels sprouts, halved
  • 4 cloves fresh garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread on the baking tray cut side down.
  3. Roast for 20-25 minutes until golden brown.
  4. Meanwhile, melt butter in a skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in lemon juice and add cod fillets. Cook for 4-5 minutes per side until opaque and flaking easily.
  6. Serve cod alongside roasted Brussels sprouts drizzled with garlic butter sauce.

Notes

  • This dish has a rich flavor from the garlic butter and the roasted Brussels sprouts add a nice crunch.
  • For best results, use fresh cod fillets.
