Description

This chia pudding is a healthy and delicious dessert or breakfast option topped with fresh raspberry compote.


Ingredients

  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk (or any milk of choice)
  • 2 tsp pure vanilla extract
  • 24 tbsp maple syrup or honey (optional)
  • 1 cup raspberries (fresh or frozen)
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions

  1. In a medium mixing bowl, combine chia seeds, almond milk, vanilla extract, and maple syrup. Whisk vigorously for 30 seconds.
  2. Cover and refrigerate for 30 minutes. Stir to prevent clumps.
  3. Chill for at least 4 hours or overnight until custardy.
  4. Mash fresh raspberries or pulse them for a smoother compote.
  5. Layer chia pudding and raspberry mixture in serving glasses.
  6. Garnish with fresh raspberries and mint leaves. Serve chilled.
