Description

Delicious strawberry cheesecake filling tucked in crispy cinnamon-sugar tortillas.


Ingredients

  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 8 small flour tortillas
  • 8 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 16 golden sandwich cookies, crushed
  • 3 tablespoons strawberry gelatin mix
  • 1/4 cup freeze-dried strawberries, crushed

Instructions

  1. Preheat the oven to 375°F and prepare two oven rack bars or taco molds for shaping the tortillas.
  2. Stir together the granulated sugar and cinnamon in a shallow bowl.
  3. Brush both sides of each tortilla with melted butter, then coat each one in the cinnamon-sugar mixture.
  4. Drape the tortillas over oven rack bars or place them in taco molds and bake for 8 to 10 minutes, until crisp and lightly golden.
  5. Let the taco shells cool completely before filling.
  6. In a large bowl, beat the softened cream cheese until smooth and creamy.
  7. Add the powdered sugar and vanilla extract, then beat again until fully combined.
  8. In a separate bowl, whip the heavy cream until soft peaks form.
  9. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  10. In another bowl, combine the crushed golden sandwich cookies, strawberry gelatin mix, and crushed freeze-dried strawberries.
  11. Spoon or pipe the cheesecake filling into the cooled taco shells.
  12. Top each taco with diced fresh strawberries.
  13. Sprinkle the strawberry crunch mixture generously over the filling.
  14. Serve immediately for the crispiest texture, or chill briefly before serving.
