- 1 cup Shredded Carrots
Instructions
- Prepare the Marinade: In a medium bowl, whisk together soy sauce, gochujang, honey, sesame oil, minced garlic, and grated ginger until well blended.
- Marinate the Chicken: Add the boneless, skinless chicken thighs, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Cook the Chicken: Heat vegetable oil in a skillet over medium-high heat. Remove the chicken from the marinade and sear each thigh for about 6-7 minutes per side.
- Activate the Sauce: Pour the reserved marinade into the skillet and bring it to a simmer for an additional 2-3 minutes.
- Serve: Allow the chicken to rest briefly before slicing. Serve it over cooked rice and top with veggies, thickened sauce, and garnishes.
Notes
- This dish can be adjusted for spice by modifying the amount of gochujang used.
- For a healthier variant, add more vegetables or serve with brown rice.
