Ingredients

  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  6. Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
  7. Flatten each ball slightly with a fork, creating a crisscross pattern.
  8. Bake for 10-12 minutes, or until edges are lightly golden. Cookies will be soft; they will firm up as they cool.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  10. Store in an airtight container at room temperature for up to 5 days.
