Description

Delicious pistachio honey cookies that are both chewy and flavorful, perfect for any occasion.


Ingredients

  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios, chopped
  • 1/2 teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the butter, granulated sugar, brown sugar, and honey until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet mixture.
  5. Fold in the chopped pistachios until evenly distributed through the dough.
  6. Scoop rounded tablespoons of dough and roll into balls, placing them 2 inches apart on the prepared baking sheet.
  7. Lightly sprinkle the tops of each ball with flaky sea salt.
  8. Bake for 10 to 12 minutes or until the edges just turn golden.
  9. Let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
