Description

A delicious cheesy corn bake with ground beef, jalapeños, and sweet corn.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) sweet corn, drained
  • 2 jalapeños, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cornmeal
  • 2 large eggs
  • 1 cup whole milk
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then season with salt, pepper, cumin, and chili powder. Stir in the chopped jalapeños and sweet corn.
  3. In a separate bowl, whisk together the eggs and milk until well combined.
  4. In another bowl, mix the cornmeal with seasoning and any remaining spices.
  5. Spread the beef mixture evenly in the baking dish. Pour the egg-milk mixture over it, followed by topping with the seasoned cornmeal mix.
  6. Bake for 25-30 minutes or until golden brown on top. Serve hot, optionally garnished with additional cheese.

  • For extra flavor, consider adding diced onions or garlic to the beef mixture.
