Ingredients

- 1 cup rolled oats
- 1 heaping cup Medjool dates (pitted)
- ¾ cup almond flour
- ½ cup shredded coconut (unsweetened – plus more for coating)
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest (about 2 zested lemons)
- 1 teaspoon vanilla extract
- ⅛ teaspoon almond extract (optional)
- ¼ teaspoon salt
Instructions
- Add 1 cup rolled oats, 1 heaping cup Medjool dates, ¾ cup almond flour, ½ cup shredded coconut, 2 tablespoons lemon juice, 1 tablespoon lemon zest, 1 teaspoon vanilla extract, almond extract if using, and ¼ teaspoon salt to a food processor until the mixture sticks together when pressed between your fingers. Stop and scrape down the sides as needed; if the mixture looks too dry, add 1 teaspoon lemon juice or water at a time until it comes together.
- Scoop about 1 tablespoon of mixture and roll between your hands to form balls, then coat in shredded coconut.
- Enjoy right away or chill for 20 minutes for the best texture. They also freeze well for easy grab-and-go snacks.
