Description

Delicious and healthy coconut date energy balls perfect for a quick snack.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 heaping cup Medjool dates (pitted)
  • ¾ cup almond flour
  • ½ cup shredded coconut (unsweetened – plus more for coating)
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest (about 2 zested lemons)
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon almond extract (optional)
  • ¼ teaspoon salt

Instructions

  1. Add 1 cup rolled oats, 1 heaping cup Medjool dates, ¾ cup almond flour, ½ cup shredded coconut, 2 tablespoons lemon juice, 1 tablespoon lemon zest, 1 teaspoon vanilla extract, almond extract if using, and ¼ teaspoon salt to a food processor until the mixture sticks together when pressed between your fingers. Stop and scrape down the sides as needed; if the mixture looks too dry, add 1 teaspoon lemon juice or water at a time until it comes together.
  2. Scoop about 1 tablespoon of mixture and roll between your hands to form balls, then coat in shredded coconut.
  3. Enjoy right away or chill for 20 minutes for the best texture. They also freeze well for easy grab-and-go snacks.
