Description

A creamy dip made with roasted onions and garlic, perfect for serving with chips or veggie sticks.


Ingredients

  • 2 large yellow onions, sliced into wedges
  • 1 whole head of garlic
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 1 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the onions into wedges; slice off the top of the garlic head.
  3. Place onions and garlic on a parchment-lined baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  4. Roast for 30-35 minutes until golden brown.
  5. Let cool slightly, then transfer to a food processor. Add cream cheese, sour cream, thyme, salt, and pepper; blend until smooth.
  6. Taste and adjust seasoning if necessary.
  7. Serve in a bowl garnished with extra thyme; enjoy with chips or veggie sticks.
