Description

A delightful creamy fettuccine dish that is light yet flavorful, perfect for any pasta lover.


Ingredients

Scale
  • 11 oz Fettuccine
  • 3 cloves Garlic
  • 1 medium Red Onion
  • 1/4 cup Plant-Based Cream or Béchamel
  • 1 cup Plant Milk
  • 1/2 cup Sun-Dried Tomatoes
  • 2 cups Spinach
  • 1/8 cup Vegan Parmesan or Nutritional Yeast
  • 1/4 tsp Salt
  • to taste Black Pepper
  • 4 tbsp Tomato Paste
  • 6 tbsp Tomato Sauce
  • 8 Cherry Tomatoes
  • 1/2 cup Fresh Basil Leaves

Instructions

  1. Boil a pot of salted water and cook the fettuccine until al dente, around 8-10 minutes. Make sure to save half a cup of the pasta water before draining for later!
  2. Prep the garlic, onion, spinach, and sun-dried tomatoes so they are ready for cooking. This will keep your cooking process seamless and enjoyable.
  3. Sauté a little oil in a skillet over medium heat and cook the red onion until soft, which should take about 3-4 minutes. Add the garlic and cook briefly, just until fragrant.
  4. Stir in the plant-based cream and plant milk, blending until smooth. Add the sun-dried tomatoes and let it simmer for 3-4 minutes, adding the tomato paste now if desired.
  5. Combine the cooked pasta with the creamy mixture in the skillet. Toss to coat evenly, then stir in the spinach until it wilts—only a minute or two! Sprinkle in the nutritional yeast or vegan parmesan and season with salt and pepper. Use the reserved pasta water if needed to achieve your desired consistency.
  6. Finish by removing from heat and folding in the fresh basil. Garnish with extra sun-dried tomatoes or halved cherry tomatoes before serving to give it that festive touch!

Notes

  • This dish can easily be made gluten-free by using gluten-free pasta.
  • For added protein, consider adding chickpeas or tofu.
  • Adjust the thickness of the sauce by using more or less pasta water.
