Description

Delicious and fluffy pumpkin pancakes perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 3/4 cup pumpkin puree
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  2. In another bowl, whisk together the pumpkin puree, brown sugar, egg, buttermilk, vanilla extract, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  4. Preheat a skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Scoop 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface.
  6. Flip and cook for another 2 minutes or until golden brown and cooked through.
  7. Serve hot with your favorite toppings like maple syrup, whipped cream, or nuts.

Notes

  • For a richer flavor, add a pinch of nutmeg.
