- 2 cups fresh tomatoes, chopped
- 2 cups kale, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 4 cups low-sodium vegetable broth
- 1/2 cup shredded Parmesan cheese
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients by chopping tomatoes and garlic and rinsing the kale.
- In a large pot over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute).
- Add chopped tomatoes; cook until they begin to break down (about 5 minutes).
- Pour in vegetable broth; bring to a gentle boil. Add spaghetti, ensuring it is fully submerged.
- Reduce heat to simmer; cover and cook for about 10 minutes or until spaghetti is al dente.
- Fold in chopped kale until wilted. Serve hot, topped with freshly grated Parmesan.
