Description

Delicious and healthy chocolate quinoa clusters, perfect as a snack or dessert!


Ingredients

Scale
  • 5 ounces sugar-free dark chocolate
  • 1 cup puffed quinoa
  • 1/2 cup raw sunflower seeds
  • 1/2 cup roasted unsalted pumpkin seeds
  • 1/2 cup sliced almonds

Instructions

  1. Add the dark chocolate to a microwave-safe bowl. Heat in the microwave for 30 seconds at a time, stirring after each heating, until smooth.
  2. In a large mixing bowl, stir together the quinoa, sunflower seeds, pumpkin seeds, and almonds. Pour the chocolate over the mixture and then stir until fully combined.
  3. Using a 1 tablespoon cookie scoop, portion the chocolate mixture onto a parchment paper-lined baking sheet at least 2 inches apart.
  4. Chill in the refrigerator for at least 30 minutes until set. Transfer to an airtight container and store in the fridge.
