Description

A hearty and delicious crockpot meal with smoked sausage, potatoes, and green beans.


Ingredients

Scale
  • 2 pounds smoked sausage (sliced)
  • 2 pounds baby potatoes (halved)
  • 2 medium onions (chopped)
  • 3 garlic cloves (minced)
  • 12 ounces fresh green beans
  • 10 ounces diced tomatoes and green chilies (with liquid)
  • 4 Tablespoons butter (1/2 stick)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper (to taste)

Instructions

  1. Add sausages, baby potatoes, onions, garlic, and green beans to the crockpot.
  2. Top with diced tomatoes and green chilies, butter, and seasonings.
  3. Cover and cook for 6-8 hours on low or 3-4 hours on high, until the potatoes are fork tender.

Notes

  • This dish can be adjusted for more or less spice by varying the amount of diced tomatoes and green chilies.
  • For a thicker consistency, use less liquid from the diced tomatoes.
