This slow cooker bourbon chicken is a delicious and easy meal that is perfect for busy nights. The chicken is tender and coated in a flavorful sauce.

- 2 lb chicken thighs boneless skinless
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup bourbon
- 1/4 cup ketchup
- 2 garlic cloves minced
- 1 tsp grated ginger
- 1 tbsp apple cider vinegar
- 1/4 tsp red pepper flakes
- 1 tbsp cornstarch
- 2 tbsp water
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Whisk together soy sauce, brown sugar, bourbon, ketchup, garlic, ginger, vinegar, and red pepper flakes until smooth.
- Place the chicken thighs in the bottom of a slow cooker.
- Pour the sauce mixture over the chicken ensuring each piece is coated.
- Cook on low for 5 to 6 hours or high for 3 hours until tender.
- Remove the chicken and transfer the sauce to a saucepan.
- Whisk cornstarch with water then stir it into the sauce and simmer until thickened.
- Return the chicken to the pot or bowl and coat with the thickened sauce.
- Garnish with green onions and sesame seeds before serving.
Notes
- This dish can be served over rice or with a side of vegetables.
- Adjust the spice level by adding more or less red pepper flakes.
