Description

This slow cooker bourbon chicken is a delicious and easy meal that is perfect for busy nights. The chicken is tender and coated in a flavorful sauce.


Ingredients

  • 2 lb chicken thighs boneless skinless
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 1 tbsp apple cider vinegar
  • 1/4 tsp red pepper flakes
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Whisk together soy sauce, brown sugar, bourbon, ketchup, garlic, ginger, vinegar, and red pepper flakes until smooth.
  2. Place the chicken thighs in the bottom of a slow cooker.
  3. Pour the sauce mixture over the chicken ensuring each piece is coated.
  4. Cook on low for 5 to 6 hours or high for 3 hours until tender.
  5. Remove the chicken and transfer the sauce to a saucepan.
  6. Whisk cornstarch with water then stir it into the sauce and simmer until thickened.
  7. Return the chicken to the pot or bowl and coat with the thickened sauce.
  8. Garnish with green onions and sesame seeds before serving.

Notes

  • This dish can be served over rice or with a side of vegetables.
  • Adjust the spice level by adding more or less red pepper flakes.
