- 1 pound carrots, cut into thin fries

- ½ teaspoon smoked paprika
- 1 cup ricotta cheese
- 3 tablespoons honey
- 1 tablespoon lemon juice
- ¼ cup pistachios, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the carrot fries with olive oil, salt, pepper, and smoked paprika until evenly coated.
- Spread the carrot fries in a single layer on the prepared baking sheet and bake for 20-25 minutes, turning halfway through.
- In a medium bowl, combine ricotta cheese, honey, and lemon juice; whip until smooth.
- In a small bowl, mix together chopped pistachios, parsley, and lemon zest for the gremolata.
- Serve warm carrot fries with the whipped dip and sprinkle pistachio gremolata on top.
Notes
- For extra flavor, let the carrot fries marinate in the olive oil and spices for 30 minutes before baking.
