Delicious peanut butter cookies filled with melted chocolate.

- 1 cup (200g) all-purpose flour
- 1/2 cup (100g) unsalted butter, softened
- 1/2 cup (100g) creamy peanut butter
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2g) baking soda
- 1/4 teaspoon (1g) salt
- 1/2 cup (100g) semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
- Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
- Use your thumb or the back of a spoon to make an indentation in the center of each ball.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Remove from oven and immediately press the indentations again if needed.
- Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Fill each cookie indentation with melted chocolate and allow to set before serving.

- Ensure cookies are transferred to a wire rack to cool completely for the best texture.
- You can substitute other nut butters if desired.
