Description

Delicious peanut butter cookies filled with melted chocolate.


Ingredients

  • 1 cup (200g) all-purpose flour
  • 1/2 cup (100g) unsalted butter, softened
  • 1/2 cup (100g) creamy peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1/2 cup (100g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  6. Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
  7. Use your thumb or the back of a spoon to make an indentation in the center of each ball.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Remove from oven and immediately press the indentations again if needed.
  10. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  11. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  12. Fill each cookie indentation with melted chocolate and allow to set before serving.
