Description
A delicious and moist cake topped with a sweet pineapple layer and creamy frosting.
Ingredients
Scale
- 1 box white cake mix (plus ingredients to prepare, as per box instructions)
- 1 can (20 oz) crushed pineapple (with juice)
- 1 tsp vanilla extract (divided, half for glaze and half for frosting)
- 8 oz cream cheese (softened)
- 3 to 4 cups powdered sugar (to taste and texture preference)
Instructions
- Preheat your oven to 350°F. In a large bowl, mix the white cake mix according to package instructions, pouring it into a greased 9×13-inch pan.
- Place the cake in the preheated oven and bake for about 25-30 minutes, or until a toothpick inserted comes out clean. Let it cool completely before moving on.
- In a saucepan over medium heat, combine the crushed pineapple (with juice), ½ tsp vanilla extract, and ¼ cup granulated sugar. Stir gently until it thickens slightly, about 5 minutes.
- Once the pineapple mixture has thickened, spoon it generously over the cooled cake. Ensure it seeps into any holes for that extra flavor boost!
- Allow the cake to cool slightly for about 10-15 minutes. This will help set the pineapple layer before frosting.
- In a mixing bowl, beat together the softened cream cheese, remaining ½ tsp of vanilla extract, and powdered sugar until smooth and fluffy. Spread it evenly over the cooled pineapple layer.
Notes
- Make sure to let the cake cool completely before adding the pineapple layer to prevent it from soaking too much.
- Adjust the powdered sugar based on your desired sweetness and texture.
