Instructions

  1. In a small saucepan, heat olive oil over medium heat. Add minced garlic and chili flakes, cooking until the garlic turns golden and fragrant, about 2-3 minutes. Remove from heat and let it infuse.
  2. In a large skillet, add a splash of olive oil and sliced onions with a pinch of salt. Sauté over medium-low heat, stirring occasionally, for about 20 minutes until they become golden brown and jammy.
  3. Boil your favorite pasta according to package instructions. Remember to reserve a cup of pasta water before draining.
  4. Stir in the infused garlic from the chili oil into the caramelized onions and cook for another 1-2 minutes. Toss in the drained pasta, mixing to combine.
  5. Gradually add the reserved pasta water, a bit at a time, to achieve a silky, glossy sauce. Drizzle the prepared chili oil over the pasta and toss to coat evenly.
  6. Plate your pasta hot, garnishing with fresh herbs or a sprinkle of Parmesan cheese for added richness.
