Description

This delicious berry brownie trifle features layers of fudgy brownies, creamy pudding, and fresh berries, making it a perfect dessert for any occasion.


Ingredients

  • 1 can cooking spray
  • 1 (19-ounce) package fudge brownie mix (plus the ingredients called for)
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup 1% milk (or skim; avoid whole or 2%)
  • 1 (3-ounce) package instant vanilla pudding mix (unprepared)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla paste (or vanilla extract)
  • 3 to 4 cups fresh berries (see note 1)
  • Fresh mint (for garnish, optional)

Instructions

  1. Line a 9×9-inch metal pan with parchment, leaving an overhang. Lightly spray the parchment. Prepare and bake brownies according to package directions for a 9×9-inch pan. Let cool completely, then lift out and cut into 1-inch cubes.
  2. In a large bowl, whisk together the sweetened condensed milk and 1% milk. While whisking constantly, gradually sprinkle in the pudding mix and continue whisking briskly until smooth. Refrigerate for 5 minutes.
  3. In a separate bowl or stand mixer, add heavy cream, powdered sugar, and vanilla. Whisk on low to combine, then increase to high and beat until medium-to-stiff peaks form, about 1 to 3 minutes. Fold the whipped cream into the pudding mixture until smooth and combined.
  4. Add one-third of the brownie cubes to the bottom of a trifle dish. Top with one-third of the cream mixture, then about 1 cup berries. Repeat layers two more times: brownies, cream, berries.
  5. Refrigerate for 1 to 3 hours, or overnight for softer brownies. Garnish with fresh mint if desired and serve cold.
