Description

A refreshing salad that combines the crunch of broccoli and the sweetness of apples.


Ingredients

Scale
  • 4 cups fresh broccoli florets, finely chopped
  • 1 large crisp apple (Honeycrisp or Fuji), diced
  • 1/3 cup dried cranberries
  • 1/4 cup red onion, finely diced
  • 1/3 cup sunflower seeds or chopped walnuts
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine chopped broccoli, diced apple, dried cranberries, red onion, and sunflower seeds or walnuts.
  2. In a separate small bowl, whisk together Greek yogurt, honey, apple cider vinegar, salt, and black pepper until smooth.
  3. Pour the dressing over the salad ingredients.
  4. Toss gently until everything is evenly coated.
  5. Cover and refrigerate for at least 20 minutes to allow flavors to blend.
  6. Toss again before serving and adjust seasoning if needed.
