Slow Roasted Salmon

Description

This slow roasted salmon recipe features a delicious combination of flavors, including Szeged Fish Rub, garlic, capers, and fresh lemon juice, making it a perfect dish for any occasion.


Ingredients

Scale
  • 2 lb. fresh salmon fillet
  • 2 tsp. Szeged Fish Rub
  • 4 T butter
  • 2 T minced fresh garlic
  • 2 T capers
  • 2 T fresh-squeezed lemon juice
  • 1/4 cup chopped fresh parsley (optional but good)
  • salt and fresh-ground black pepper to taste
  • cut lemon pieces to squeeze on at the table (optional but good)

Instructions

  1. Preheat the oven to 325F/162C.
  2. Rub the salmon on both sides with Szeged Fish Rub and let it come to room temperature.
  3. While fish is coming to room temperature, use a garlic press to mince 1-2 T of minced garlic, depending on how much you like garlic.
  4. Measure out 2 tablespoons of capers.
  5. Melt the butter in a small non-stick frying pan over low heat.
  6. Add the minced garlic to the melted butter and cook for 1-2 minutes on low.
  7. Add capers and stir to combine, then turn off heat.
  8. Tear off a large piece of foil and put it on a sheet pan.
  9. Put the salmon in the center of the foil, pour over butter mixture and spread it evenly over the salmon, then squeeze on the lemon juice.
  10. Wrap the foil loosely up over the salmon and pinch the edges together.
  11. Put the sheet pan in the oven and bake for 15 minutes.
  12. Remove the sheet pan from the oven and open the foil, moving it away from the salmon.
  13. Put the sheet pan back into the oven and bake for 15 minutes longer.
  14. Chop fresh parsley and cut some pieces of lemon while the salmon continues to bake.
  15. After a total cooking time of 30 minutes, remove the salmon from the oven, sprinkle with parsley, and season with salt and fresh-ground black pepper to taste.
  16. Serve the slow roasted salmon right away, with cut pieces of lemon if desired.
  17. Gently move the cooked piece of salmon onto a plate to take photographs, or serve it directly from the foil if serving to family.

Notes

  • You can rinse the capers if you want the flavor to be less strong, but I love capers so I never bother with that.
  • Use a skinless salmon fillet for best results.
  • This dish pairs well with a side of fresh vegetables or a salad.
