Description

A delicious blend of sweet and spicy chicken served with creamy coconut rice and fresh mango avocado salsa.


Ingredients

  • 500 g chicken breast, cut into bite-sized pieces
  • 3 tbsp maple syrup
  • 2 tbsp sriracha sauce
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro
  • Salt to taste
  • 1/3 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp lime juice

Instructions

  1. Start with the marinade. In a bowl, mix maple syrup, sriracha, soy sauce, olive oil, and garlic. Toss the chicken pieces until they’re fully coated. Let them sit for at least 20 minutes.
  2. While the chicken marinates, rinse your jasmine rice until the water runs clear. Combine it with coconut milk, water, and salt in a pot. Bring it to a gentle boil, then reduce the heat, cover, and let it simmer.
  3. Next, prepare the salsa. Gently mix the mango, avocado, red onion, lime juice, and cilantro. Set it aside to allow the flavors to meld.
  4. Heat your grill or a grill pan over medium-high heat. Cook the chicken pieces, turning occasionally, until they are fully cooked and slightly charred on the edges.
  5. Whisk together the chili mayo ingredients until smooth. Taste and adjust the spice level if needed.
  6. To assemble, spoon coconut rice into a bowl, top with grilled chicken, add a generous scoop of mango avocado salsa, and drizzle with chili mayo.

Notes

  • For extra flavor, the chicken can marinate longer than 20 minutes.
  • Make sure to adjust the spice level by adding more or less sriracha according to your preference.
